Decaf
All of the flavor, none of the caffeine. This EA decaf from Colombia boasts notes of shortbread, rose, and raspberry jam.
Located in Manizales, Colombia, Descafecol is the only decaffeination plant in the country. Descafecol uses a natural solvent called Ethyl Acetate (EA) to remove caffeine from the coffee beans. The Ethyl Acetate used is derived from fermented sugarcane molasses giving it the nickname “Sugarcane process”.
The steps involved in this decaffeination process are:
Green coffee is steamed to remove the silver skin (a papery membrane that covers the green coffee bean).
It is then moistened to open the pores of the green bean.
The green coffee is sent to the “extraction tanks” where it is introduced to the EA solvent, removing caffeine.
Decaffeinated coffee is sent to the “drying tanks” where room temperature air is used to dry the coffee back down to an acceptable moisture content.
Finally, the beans are polished to ensure a strong and clean green coffee bean.
